- So, first soak the zest in a container with plain water. The period of soaking is 3 days, daily it is necessary to change the liquid several times. Otherwise, it will begin to bloom, and the bitter aftertaste will not leave the product.
- When the set time has come to an end, remove the crusts and leave them to dry on fabric napkins. Chop in random order as you like (cubes, rhombuses, etc.). Boil in water for about a quarter of an hour.
- Then take the amount of water according to the recipe and combine it with granulated sugar. Set to low heat to get crystals dissolved. Add the crusts and simmer for 2 minutes, then remove from the stove and keep in syrup all day.
With lemon juice
- Measure granulated sugar and citrus skins, taking 0.5 kg of each component. It will also take 4 tbsp. l lemon juice, vanilla pod and a couple of clove buds.
- Fill refractory cooking utensils with water, throw in the zest and simmer for 4 minutes. Drain, add cold water, repeat.
- Make a syrup based on all spices and granulated sugar, pour a little water. Then add the cooked skins to the syrup and leave them in the composition for a couple of hours. Then dry and consume.
- Wash 5 large enough citruses thoroughly. Dry and cut the peel, chop it into small pieces. Send in a heat-resistant container and pour 0.4 liters. water. Boil the raw materials for about 10-12 minutes.
- After the set time has elapsed, change the water to fresh. Add a pinch of salt. Wait for boiling, simmer for about 10 minutes. Thanks to this procedure, bitterness is removed from the zest. But the citrus aroma will be fully preserved.
- Change the water to fresh again, only this time it does not need to be salted. Boil for about 10 minutes. Throw it in a colander. Meanwhile, start making syrup. Mix 0.5 kg. sugar, 0.25 liters filtered water and 20 gr. butter.
- Bring the mass to a boil, put the zest in it. Continue boiling on a lazy fire for about half an hour. As a result, the peel should be almost transparent. Remove the pieces from the syrup and dry. Leave at room temperature.

- It is noteworthy that in the preparation of such a treat, there is nothing complicated. However, beginners are advised to adhere to certain rules in order to prevent common mistakes. As a result, you can create the perfect treat.
- Rinse citruses thoroughly. After drying, peel off, making incisions crosswise. Then the zest can be separated using a tablespoon. This will greatly facilitate the procedure.
