Angled talker is a conditionally edible species of mushrooms of the ordinary family. It is better known to the average layman under the name Govorushka Ginger. The Latin name for this fungus is Clitocybe geotropa. Note that, although this type of talker is edible, nevertheless, its culinary processing involves mandatory boiling.
Description
Such a species as a red-headed govorushka has a smooth hat of a saturated red color, in the central part of which a characteristic tubercle is located. In diameter, the fruit body of the cap often reaches 200 mm.
Young mushrooms from older adults are distinguished by a convex hat, which acquires a funnel shape with growing. The skin is delicate and shiny, in adults it is drier with a matte finish. Directly, the pulp of the fruiting body itself is quite dense and fleshy, with a well-defined pleasant aroma and taste. In young mushrooms, the fruiting body is white, in mature ones it acquires a fawn color. Upon breaking, the color of the pulp does not change.
The lamellar body is thin, like the plates themselves, often located and descending to the leg. The color of the plates is white, with the growth of the fungus they acquire a pinkish or yellow hue. Spores are ovoid in shape, the color of the spore powder is white.
The leg of the govorushka, bent in regular cylindrical shape, is quite high (reaches 150 mm in length), the width of the leg is not more than 30 mm. The structure is dense, the color is light yellow. In adult specimens, the color of this part of the fungus coincides with the color of the fruiting body. At the base, the leg color is darker (brown).
Where grow
Bent talkers are mushrooms that grow mainly in small groups, so finding them, you can immediately collect a good harvest of these delicious representatives of the mushroom kingdom. Also, these representatives of the ordinary family can grow individually, but such single individuals are extremely rare.
The fruiting season of talkers is from mid-summer to late autumn, the peak of mushroom growth occurs in the second half of August and lasts until mid-September.
The nutritional value
Although govorushka is a little-known type of mushroom, nevertheless, it has quite good nutritional qualities. For culinary purposes, only the fruit body of the hats of young specimens is used. This is due to the fact that the pulp of the legs of the dialect has a rather rigid, fibrous structure.
Preliminary culinary processing of mushrooms implies the obligatory boiling of this species for 20-30 minutes, and the brine itself, in which the govorushki was cooked, merges. Next, the boiled raw material is pickled, fried, and also added to different dishes to prepare a variety of culinary delights (aromatic dressings, gravy, etc.).
The use of these mushrooms in raw form for cooking is not recommended, since the pulp contains certain enzymes responsible for the bitter taste, which can be eliminated by boiling. After heat treatment, a look like red-headed govorushki loses much in size.
Properties and features
We draw attention to the fact that in folk medicine this mushroom is used to make healing broths and extracts that are highly effective against diseases of the genitourinary and respiratory systems. Ointments from natural raw materials are also used as an excellent disinfectant and wound healing agent.
