The content of the article
Govorushka is the name of a large detachment of mushrooms that are abundant in the temperate latitudes of Russia. The detachment includes a huge variety of edible species, but also unpleasant in taste and even poisonous mushrooms.
Funnel talker characterization
The funnel govorushka or Clitocybe gibba (in Latin) is a conditionally edible mushroom (category IV for food use) from the Tricholoma family (Ryadovkov) of the genus Govorushek. It prefers mixed, but mostly deciduous forests, grows perfectly in symbiosis with oaks and pines. They grow in heaps on the litter of trees, sometimes forming circles. Most common in the temperate climate of Russia, Canada, and the territory of some European countries. The season of “silent hunting” for the talker lasts from June to October.
There are several more names for this fungus, which vary depending on the place of growth: hare ears, aromatic or odoriferous mushroom, funnel fungus, funnel. It is not known why the mushroom got such a "talking" name, but there are several versions on this subject.
Of course, the mushroom cannot talk and make any sounds, although this is the thought that visits it first. Presumably, the nickname "talker" still happened by association from the phrase "speak fast, often chatter", since the mushroom is often found, quickly gathers and grows in heaps.
The appearance of the mushroom
Fragrant talker is a small mushroom-shaped or funnel-shaped sausage. The hat has a concave appearance with uneven edges raised to the top, dry to the touch. Its diameter reaches 8 cm. The tint varies from fawn to yellow-brown.
The pulp of a govorushki funnel is light, thin, slightly compacted to the center of the cap. It has a specific smell reminiscent of pineapple. White, often located plates descend to the leg. The powder of spores of the fungus is also white.
The leg grows up to 7 cm, in diameter - about 1 cm. The pulp of the leg is hard, fibrous. Its color matches the shade of the hat, or a little lighter.
Useful properties of funnel govorushki
This type of mushroom is known for its low calorie content, it is often used as an ingredient in diet food. Odorous talker is rich in vitamins, minerals and amino acids, in excess contains fiber. The correct combination of these substances in the fungus is of great benefit to human health. Pros of using funnel govorushki in food:
- Normalizes the work of the digestive tract. It improves the functioning of the stomach, inhibits the development of abscesses, eliminates hemorrhoids and bloating.
- Accelerates the process of regeneration of wounds. Tissue inflammation disappears, blood circulation is restored.
- Strengthens the immune system. The high fiber content cleanses the intestines, removes toxins, harmful elements, lowers cholesterol.
- Prevents the appearance and growth of cancer cells.
- Slows down the aging process. The appearance improves, the work of the liver and kidneys is normalized.
- It has antibacterial properties.
- It speeds up the metabolism.
Cooking use
Since the funnel govorushka is conditionally edible mushroom, its use in food is possible only after careful cooking. In general, a mushroom is considered edible only at a young age. Use only hats, legs are hard, tasteless and poorly digested.
Immediately before cooking, the talkers are thoroughly cleaned of debris, washed and left for a short time in water for soaking. Like all mushrooms, they can be salted, pickled, dried and frozen for long-term storage. However, it is worth noting that all these procedures should be carried out after a long cooking. If it was decided to pickle the mushrooms - be sure to use a strong vinegar marinade.
The specific flavor of the talkers and the long cooking process significantly limit the variety of possible dishes. This type of mushroom is not quite suitable for soups and cream sauces, it does not go well with fish and poultry. But it harmonizes well with fried and boiled vegetables.
The use of mushrooms is extremely contraindicated for people with stomach disease, children under 12 years old and allergies.
Double mushrooms
There are some types of inedible and poisonous talkers, very similar to the edible funnel fungus. One of these doubles is a whitish talker. This is a very poisonous mushroom; after its use, death is inevitable. The habitat, place and time of collection in the whitish talker is absolutely identical to the odorous talker. One must be extremely careful and attentive. Even with slight doubts, it is better not to cut the mushroom.
This mushroom is much smaller than described, has a grayish-white! Color. The main distinguishing feature is a powdery coating on the hat.
Other types of talkers are also similar to each other, but if you cook them using the above rules, nothing critical will happen. These are govorushki giant, fragrant and winter.
