What could be better than home-made pizza prepared according to an original Italian recipe? Crisp, tender sauce, viscous cheese and fresh vegetables - all this does not compare with the purchased product. Traditionally, pizza is cooked in the oven, but culinary specialists have come up with recipes that allow you to create a dish in a pan. It all depends on time and imagination, the main thing is to follow practical recommendations and not violate the exposure time.
Four Cheese Pizza
Dough:
- rye flour - 550 gr.
- milk (fat content from 1.5%) - 280 ml.
- chicken egg - 1 pc.
- dry baker's yeast - 10 gr.
- olive oil - 90 ml.
- granulated sugar - 35 gr.

Filling
- Parmesan cheese - 90 gr.
- Mozzarella cheese - 120 gr.

- Sift flour, mix it with other loose ingredients (salt, sugar, yeast).
- Beat the egg in a separate container, add olive oil and milk to the wall of the dish.
- Gently pour the mixture into the flour, mix with a fork so that no lumps form. Then turn on the mixer and knead the dough, bringing the mass to homogeneity.
- Cover the container with the dough with a waffle towel or cotton towel, put in a warm place for 1 hour. The mass should rise and thicken.
- At the end of the period, pour a little flour on the cutting table, grease your hands with it and lay the dough on the surface. Form a round cake of round or square shape (thickness about 5-7 mm.).
- Cover the pan with foil or baking paper, carefully move the base for the pizza. Lubricate the dough with olive oil, make holes with a fork so that it bakes evenly.
- Grate or grind all types of cheeses, put them in the following order: put “Mozzarella” on the bottom, then lay out “Fontina”, “Emmental”, “Parmesan” one by one.

- wheat flour - 450 gr.

- Continuing to stir, add oil (vegetable, corn). Heat water or milk to 40 degrees, pour it along the edge of the wall of the dishes, while stirring with a fork, knead the lumps.
- When the mass is completely wet, beat it with a mixer, then knead the dough on a cutting table. The final composition should not stick to the hands.
- Wrap the container with a towel or wrap it with cling film, put in a warm place for 1 hour. Begin cooking pizza toppings.
- Cut the chicken fillet into slices or cubes, salt, pepper and fry in a pan until golden brown. Then fill with filtered water and simmer another 5-7 minutes to make the meat tender.

- Heat the milk to 50 degrees, cut the butter into pieces and add to the bowl. Stir to make the composition homogeneous. Cool the mixture, beat the egg and beat with a mixer for 5 minutes.
- Sift the flour, combine it with salt and pepper, then slowly pour to the previous composition, stir at the same time.
- Knead the dough on a flat surface so that it stops sticking to your hands. Roll out a cake layer 6-10 mm thick.
- Take a pan with a thick bottom, grease and put out the dough. Combine ketchup and mayonnaise, treat them with cake, make holes with a fork. Important!
