Peeled tomatoes are used in various recipes. And this is not surprising - the peel wishes the dish more coarse, it is felt in the food even after its full preparation. To make the food tender and tasty, the skin of tomatoes needs to be removed. Especially when making sauces and homemade ketchups where absolute consistency is required. So, how to peel tomatoes?
Hot and icy water
This is a classic way to rid a tomato of a peel. For peeling, you need to choose ripe but strong enough tomatoes. The ripeners will not fit - they will immediately fall apart from boiling water. For the whole procedure, we need a pot of water, a basin of ice water, a few tomatoes and a knife.
- First you need to prepare the tomatoes. They are thoroughly washed, stems are removed if necessary.
- There is much debate about whether to cut the stalk in advance. On the one hand, this, of course, is convenient, since you do not have to pick your hot tomato later. However, on the other hand, during blanching valuable tomato juice comes out, right from the place where the stem was cut. Therefore, it is better, of course, to cut the stalk after blanching.
- On the back of the tomato (not from the one where the stalk is), you need to make a cross-shaped incision. It will allow you to quickly clean the skin after blanching.
- Put the water in the pan on fire and bring it to a boil. Reduce the heat so that the water does not boil much.
- Place a small container of cold water near the gas stove. For persuasiveness, you can throw pieces of ice there - this will allow the liquid to stay cold longer.
- Dip the tomatoes in boiling water for 10-25 seconds. Holding time depends on how ripe your tomatoes are. If you blanch tomatoes often, very soon you will be able to determine the exact blanching time experimentally. However, remember that tomatoes cannot be kept in boiling water for more than 30 seconds - after that they will begin to boil and become soft.
- It is best to blanch tomatoes in a special strainer or slotted spoon to quickly lower and pick up vegetables, rather than catch them with a spoon throughout the pan.
- After you take the tomatoes out of boiling water, they must immediately be immersed in ice water for 20 seconds. This will stop the exposure to heat, which will prevent their cooking. Anyway, ice water will help to cool tomatoes quickly so that they are much more pleasant to peel.
- And peeling tomatoes after such blanching is a pleasure. A sharp temperature difference affects the tomatoes in the most wonderful way - the peel peels from them almost by itself, without much effort.
- After that, the stalks will need to be cut off from the tomato, then you can use the tomatoes further according to the recipe.

An emergency way to peel tomatoes
However, there is not always time for such a long operation with a pot, basin, boiling water and ice. When a cooking recipe requires peeled tomatoes here and now, you can use the quick way to peel tomatoes from their skin. For this, only tomatoes and a kettle of boiling water are needed.
Place the washed and notched tomatoes in the sink. Pour boiling water from the kettle. Water each tomato for at least 10 seconds. Usually this is enough for the skin to begin to depart on its own. If some tomato still resists and does not want to undress, pour boiling water over it again.
Peeling tomatoes from the skin on the fire
The following method of peeling tomatoes can be used in extreme conditions, for example, in nature. After all, what can be tastier than a juicy, peeled tomato in the bite with a piece of fried barbecue?
Place the washed tomato on a small clean stick or fork. Hold the tomato over the burner or bonfire for about 20 seconds. Twist the tomato constantly to warm it from all sides. After a while, you will notice that the skin begins to frown. Now it’s very easy to remove it with your hands, the main thing - do not burn yourself.
We clean the tomatoes from the skin with a knife
Cut the tomato into four pieces. Carefully cut the stems. After that, put a quarter of the tomato skin on the board with the skin, and seeds up. Carefully scrap the tomato flesh with a knife, leaving the skin on the cutting board. This, of course, is a painstaking task that requires a lot of time, but this method has a right to exist. Especially if, after peeling, you still have to grind the tomatoes into a homogeneous mass.
