A truly Austrian dish has gained wide popularity in many countries of the world. To date, strudel is made from thin dough with a lot of filling. Apple strudel: a classic of the genre
For the test:
- butter - 60 gr.
- table vinegar (6%) - 20 ml.
- wheat flour - 225 gr.

- breadcrumbs for breading - 90 gr.
- sour apple (green) - 6-8 pcs.
- granulated sugar - 110 g.
- walnut - 110 gr.
- cinnamon - 3 pinches

- butter - 125-130 gr.
- icing sugar (for decoration) - 30-40 gr.
- First you need to cook the dough. Take a deep bowl, sift flour into it. Break the chilled egg, add vinegar and water. Stir with a fork. Melt the butter, add to the first composition.
- Now knead manually, then beat the dough several times on the working surface of the table. Thus, you will make the raw materials airy, but without extra bubbles.
- Leave the dough for 45 minutes at room temperature, within this period it will reach and will be ready for further manipulations. The future elasticity and suppleness of the raw material directly depends on the stage.
- Prepare the filling. Rinse and dry the apples, remove the core, chop each fruit into 2 parts. Now chop the halves with very thin slices, sprinkle with lemon juice.
- Send a piece of butter to the pan, melt. Place chopped apples, cinnamon and granulated sugar in a heat-resistant dish. Cover, simmer for 3 minutes at low power.
- Peel and chop walnuts with slices. Put them in a frying pan, continue languishing until the apples are completely softened. As soon as this happens, turn off the stove, cool the contents.
- Now flip the composition into a colander, shake the dishes to get rid of the remaining fluid. The filling for the strudel is ready. Lubricate the work surface with vegetable oil, lay out the dough and knead it until it is working.
- Start rolling. To do this, spread a cotton towel on the table, place the dough on top. Make a thin layer out of it. Before each rolling pin, lubricate the raw materials with vegetable oil.
- You need to make a rectangle. Now you need to stretch the dough. Place your palms in the center, begin to slowly sip the plate to the sides to get a translucent rectangle.
- After all the manipulations, sprinkle the dough with breadcrumbs for breading. This must be done to get a crispy strudel. Rusks will absorb the juice released during the baking process.

- Combine the flour sifted through a sieve with salt, mix. Pour warm drinking water into a bowl, add 30 ml.vegetable oil. Begin kneading first with a fork or spoon, then with your hands. You should get a soft and sticky dough.
- Blind a ball out of it, grease with the remains of sunflower oil, wrap it with a film. Leave in a warm place for 45 minutes, so that the raw materials finally reach.
- Wash the cherry, remove the seeds, leave the berries on a sieve to drain the liquid. Now move the fruit into a bowl, sprinkle with granulated sugar. After 20 minutes, place the composition on the stove, after boiling, cook for 7 minutes.
- Drain the juice, it is not needed. Cook the apples, they must be peeled, chopped with thin plates and sautéed in butter. Mix the fruits with the cherry.
- The dough came up. Lubricate the table with vegetable oil, put the raw materials on the working surface. Form a rectangle, roll it into a thin layer.
- Put on a towel, additionally stretch the dough with your palms so that it becomes translucent. Grease the dough with melted butter, sprinkle with powdered sugar.
- Line the mixture of cherries and apples, roll the strudel. Wrap the edges so that the filling does not fall out. Heat the oven to 190 degrees, put the strudel on a baking sheet, oiled. Bake for half an hour under the foil.

- Sift the flour, form a slide on the work surface. Make a small deepening inside, break a chilled egg into it. Pour in salt, pour in oil. Add a little warm water, knead the dough.
- Leave it to insist for half an hour, it is advisable to put the composition in the refrigerator. Cook the apples at this time. They need to be washed, cleaned from the middle, chopped with very thin plates.
- Sort out raisins, wash, soak in boiling water for a quarter of an hour. Drain, dry on a towel. Chop the walnut into slices without sharp corners.
- Mix nuts with raisins, pour cinnamon, apples, granulated sugar. Pour in an alcoholic beverage to add flavor and aroma. Now take a suitable dough, grease the surface with vegetable oil.

- lemon juice - 40 gr.
- vanilla sugar - 20 gr.
- drinking water - 130 ml.
- almonds - 100 gr.
- salt - on the tip of a knife
- flour - 230 gr.
- Combine chicken yolk with sifted flour, pour warm water, pour salt. Knead the dough until soft and elastic. Insist first at room temperature for 20 minutes, then in the cold for another quarter of an hour.
- While the dough is coming in, start cooking the toppings. Remove the stem and core from the apples, wash and dry each fruit. Chop the fruit into very thin slices. Sort the raisins, soak it in boiling water for 15 minutes. After that, dry, combine with apples.
- Grind the almonds in small pieces, add to the previous mass. Sprinkle the whole mixture with lemon juice. In another bowl, mix the breadcrumbs, cinnamon and vanilla sugar.

- Sort the raisins, soak in boiling water for 5 minutes, squeeze the water, add to the apples. Chop the nuts, send them along with jam, cinnamon and sugar.
- Roll the finished dough into a thin layer, lay the filling on top of it. Twist in a roll, send on a greased baking sheet. Bake for 30 minutes, setting the oven to 185 degrees.
