Jerusalem artichoke is a source of inulin. The substance that the pear is rich in is recommended for type 2 diabetes. It normalizes the level of sugar in the patient's body. The root crop stimulates the pancreas, helps the body to produce insulin. Jerusalem artichoke is rich in fiber. With a high level of sugar in the blood, the root crop is consumed three times a day in its raw form. Jerusalem artichoke recalls the taste of potatoes, only more sweet and low in starch. Tasty and tender casserole is also prepared from:
- fresh and salted mushrooms - 200 g each;
- Jerusalem artichoke - 600 g;
- low-fat hard cheese - 50 g;
- onions - 1 pc.;
- eggs - 1 pc.;
- vegetable oil - 30-40 ml;
- breadcrumbs.
You will also need spices and salt, because without spices the dish will turn out to be too fresh.
First, onion cubes or half rings are fried in a pan. Then, salted mushrooms and fresh mushrooms are passaged separately. The components are brought to half-preparedness, then mixed, a little water is added to the container and stewed for 3-4 minutes.
While the onions are languishing in a pan, the washed Jerusalem artichoke is boiled in boiling water. It is better to salt the base, but it is important not to overdo it with spices. The liquid is drained and the root crop is turned into a smoothie, seasoned with a raw egg. Add mushroom mass to the earthen pear, mix.
The paste is transferred to a mold greased with softened butter. The bottom is sprinkled with breadcrumbs. Puree of mushrooms and earthen pears are leveled. The last layer is grated cheese, so that the casserole has a piquant viscous crust. The dish is cooked for 25 minutes, turning on the oven 180 degrees. Serve hot and cold.

To protect themselves from complications caused by diabetes, juice is taken in spring and autumn. The duration of treatment to improve the pancreas is 7-10 days.
In the summer, when the body suffers from dehydration, they make tea from Jerusalem artichoke. In the evening, 100 g of crushed raw root crops are poured into a thermos. Brewed with two cups of boiling water. Insist all night, and filter in the morning and divide into several portions.

In diabetes, sugar is not recommended. Honey is allowed, but only small portions, not more than 50 g per day. Jerusalem artichoke syrup is added to tea, coffee and other drinks as a sweetener. It’s not difficult to cook it:
- Grind 1.5–2 kg of washed root crops. Squeeze the juice.
- Pour the drink into a pan with a thick bottom, put on minimal heat.
- Preheat to 45-50 degrees. It is impossible above to prevent vitamins and minerals from evaporating from the workpiece.
- Stew future syrup for 10 minutes. Remove and cool, and then put on the stove again.
Freshly squeezed juice from an earthen pear is heated several times. Part of the workpiece should evaporate. The drink will become thick and viscous, similar to honey. Lemon juice is sometimes added to the syrup to give it a sour taste. Jerusalem artichoke sweetener is stored in a glass jar with a tight lid.
Even an earthen pear is recommended by doctors. The product, of course, does not cure diabetes, but will improve the condition of the pancreas and the well-being of the patient.
