Oyster mushroom pulmonary (Pleurotus Pulmonarius) belongs to the family Oyster mushroom and the genus Oyster mushrooms. She is considered the most outstanding species from the rest of the representatives of this family. Young mushrooms are used in the preparation of various culinary dishes. Its characteristic feature is a white or ivory hat. It also has other names - such as oyster mushroom spring, beech and whitish. This representative does not have a particularly catchy color, but the shape of the mushroom itself looks elegant and beautiful.

The external structure of the mushroom itself is divided into a hat and a leg with characteristic properties.

Its convex-open shape is similar to the human auricle, sometimes a fan because of the edges bent around the entire perimeter, and the size reaches 2-5 cm in radius. The edges often “wear out” over time, turn into fringe. From above it is covered with a thin smooth film. Sometimes it happens that the caps are twice as large, but usually mushrooms with this size are already old and unsuitable for food. Her color ranges from white to light gray, which can sometimes even be coffee, turning into darker shades closer to the leg. In ripe mushrooms, they turn yellow. On the wrong side of it there are a large number of plates of medium width, which are directed to the beginning of the legs. They, too, with a hat change color when they age. In addition, light gray spores are located in them, with which oyster mushrooms multiply. The mushroom pulp is soft, crumbly, airy and snow-white.

It is located on the side, but occasionally it is in the center of the cap, and resembles a cylinder in shape. Their height is usually not more than five centimeters, and the width is not more than 6-10 centimeters. In young individuals they are small, only 1-2 centimeters and the same in diameter. Its surface is covered with tiny hairs, which feel like a pile to the touch. The color of the legs is light gray.

This type of oyster mushroom is quite common in all forest latitudes of the former countries of the Soviet Socialist Republic, except Ukraine. It grows with entire families on dead trees, which are already beginning to turn into humus. Mushrooms mainly prefer hardwood (beech, oak, birch, larch, linden), but sometimes they can be found on spruce with pine. They grow well on dried stumps and affected trunks. A lot of generations appear intergrown mushrooms due to their active growth.

Under favorable weather conditions, they actively begin to grow in whole groups, reaching hundreds of small fungi that have grown together in a bunch. To do this, take as sharp a knife as possible and cut not one mushroom, but a whole family. There is an opinion that they can be cut off, but this is wrong, since the entire root system is injured in this way. Therefore, further growth of new mushrooms can be over. Oyster mushroom bears fruit from the end of spring until the end of the first month of autumn after heavy rains.

Similar varieties

In nature, there are both edible and inedible analogues. Among them are distinguished:

Pleurotus pulmonarius

  1. Oyster mushroom is plentiful. It looks more like the others in appearance, but the only significant difference that you should pay attention to is the hat. It is much thinner, and its edges are directed towards the earth.
  2. Oyster mushroom is oyster. Her hat is much darker and the leg is more massive, so it is very difficult to remove the mushroom from the tree trunk.Although it is edible, but its taste is not too bright and only young individuals are allowed to cook.
  3. Oyster mushroom. It can be easily distinguished from pulmonary due to the villi on the edges of the mushroom cap, but in color it is the same as pulmonary.
  4. Pleurocibella serving. It is worthwhile to distinguish it from oyster mushroom, as pleurocibella is a poisonous mushroom that in no case should be eaten. It can be distinguished by an unpleasant odor and a fragile structure. In some countries it is considered edible, but there have been many cases of poisoning after ingestion.

Edibility of Pulmonary Oyster

It is acceptable for use, as it belongs to the third subgroup of mushrooms. It includes conditionally edible mushrooms, which cannot be eaten in an unprocessed state, but after a good heat treatment they can be safely eaten. As practice shows, oyster mushroom does not have such bright tastes as, for example, boletus, porcini mushroom and others. Young mushrooms should be consumed, as the older they are, the stiffer the flesh.
